“Serrats” preserves only use Anchovies of the finest quality “ENGRAULIS ENCRASICHOLUS” captured at the best moment of the season, between April and June, in the Bay of Biscay. Our Anchovies are notable for being elaborated by means of a meticulous and handmade process, very similar to salted Anchovies, which maintains the original characteristics of the Anchovies. Because of its meat and aromatic flavor, our Anchovy fillets are a delicacy.
FILLETED SALT-CURED YELLOWFIN TUNA
Mojama is prepared using the loin of premium quality yellowfin tuna. Once cut, the tuna is cured using pure sea salt and then air-dried, a process which gives our Mojama an unmistakable, deep flavor. There are no added preservatives or colors.
MULLET ROE
Also known as bottarga, it is considered the Mediterranean's caviar and is an extremely versatile product. The roe is salted, cleaned and dried and then vacuum packed all by hand.
YELLOWFIN TUNA ROE
A Mediterranean delicacy, this yellowfin tuna roe is salted, cured and traditionally sliced thin, or grated and sprinkled on seafood pasta dishes. Tuna roe is tender with a delicate aroma and deep flavor.
LING ROE
Ling is a fish similar to Cod. Ling Roe is salted, cleaned, dried, and then vacuum packed all by hand. It is a Mediterranean Sea delicacy with a soft flavor.
BONITO ROE
Hand-cut and cured with pure sea salt from the salt flats of Murcia, Spain. The process preserves their original taste and tenderness of the roe.
